Date Spice Cake

MAKES ONE 20 CM CAKE

285 g (1½ cups, lightly packed) brown sugar

2 tablespoons butter, melted

1 egg, beaten

260 g (1¾ cups) self-raising flour

1 teaspoon ground cinnamon

¼ teaspoon ground cloves

½ teaspoon ground mace

160 g (1 cup) chopped pitted dates

125 ml (½ cup) milk

Preheat oven to 180°C. Grease and flour a 20 cm cake tin.

Combine brown sugar, butter and egg in a bowl and beat well. Sift the flour and spices into a bowl. Add the dates to the sugar mixture. Stir in the flour mixture alternately with the milk. Beat for 5 minutes. Spoon the batter into the tin, smoothing the top even.

Bake for 30 minutes, or until a skewer inserted in the centre comes out clean. Cool the cake in the tin for 30 minutes, then turn out onto a wire rack to cool completely.
