2 eggs
110 g (½ cup) caster sugar
120 g butter, softened
1 teaspoon vanilla essence
110 g (¾ cup) plain flour
90 g (¾ cup) cornflour
½ teaspoon bicarbonate of soda
1 teaspoon cream of tartar
Preheat oven to 180°C. Line a baking tray with baking paper.
Using an electric beater, whisk the eggs and sugar in a bowl until thick and pale. In another bowl, beat the butter until soft and creamy and add to the egg mixture with the vanilla.
Sift the dry ingredients into a bowl. Gently stir into the egg mixture until combined well.
Drop tablespoons of mixture onto the prepared tray. Bake for 10–15 minutes, or until golden.
