Honeycomb Pudding

SERVES 4–6

75 g (½ cup) plain flour

110 g (½ cup) caster sugar

4 eggs, well beaten

125 ml (½ cup) milk

1 tablespoon butter, melted

175 g (½ cup) golden syrup

1 teaspoon bicarbonate of soda

custard, to serve

Preheat oven to 180°C. Grease a 1 litre (4 cup) capacity baking dish. Mix flour and sugar in a bowl.

Place eggs, milk, butter, golden syrup in a bowl and whisk to combine well. Stir in the soda until mixture is foamy then add into the flour mixture and stir until smooth. Spoon mixture into the baking dish.

Bake for 20–30 minutes, or until a skewer inserted in the centre comes out clean.

Serve hot, with custard.
