SERVES 4–6

2 slices day-old bread

2 large ripe tomatoes, thinly sliced

2 granny smith apples, peeled, cored and grated

2 onions, peeled and thinly sliced

500 ml (2 cups) milk

2 teaspoons butter

Preheat oven to 190°C. Generously grease a 1 litre (4 cup) capacity baking dish.

Soak the bread briefly in water, then squeeze as much out as possible. Place a layer of sliced tomatoes over the base of the dish and season with salt and pepper. Crumble some of the bread over the tomatoes and scatter over some of the apple and onion, seasoning with salt and pepper.

Repeat layering until ingredients are used, finishing with a layer of crumbled bread. Pour the milk over and dot with butter.

Bake for 1 hour, or until golden and bubbling. Serve warm.
