Apple Batter

SERVES 6

150 g (1 cup) plain flour

1 egg, well beaten

250 ml (1 cup) milk

2 tablespoons butter

3 granny smith apples, peeled, cored and sliced

brown sugar, to sprinkle

Combine the flour with a pinch of salt in a bowl and make a well in the centre. Add the egg to the well with half the milk and, using a whisk, gradually work the flour into the milk mixture until smooth. Add the remaining milk, stir until smooth, then cover and stand for 30 minutes.

Preheat oven to 180°C. Melt the butter and pour it into a greased 20 cm round pie dish. Lay the apples over the base of the dish and pour over the batter. Bake for 20–30 minutes, or until crisp and brown.

Serve immediately, sprinkled with brown sugar to taste.
