Golden Pudding

SERVES 6
2 tablespoons butter, softened
2 tablespoons caster sugar
1 egg
½ teaspoon bicarbonate of soda
125 ml (½ cup) milk
2 tablespoons golden syrup
150 g (1 cup) plain flour
Bring a large saucepan of water to the boil for steaming, placing a small heatproof plate upside down in the water to keep the pudding basin off the base of the pan. Lightly grease and flour a 1.5 litre (6 cup) capacity pudding basin.
Using an electric beater, beat the butter and sugar in a bowl until light and creamy. Add the egg and beat well. Dissolve the soda in a little of the milk in a cup. Add the syrup, remaining milk, flour and dissolved soda to the butter mixture, stirring to mix well.
Spoon the batter into the basin, cover tightly and lower it into the boiling water. Steam for 1½ hours, or until cooked through, adding more water to the pan as required.
