MAKES 12

1 egg, beaten

250 ml (1 cup) milk

225 g (1½ cups) plain flour

1 tablespoon caster sugar

2 teaspoons baking powder

Preheat oven to 180°C. Grease and butter a 12-hole 60 ml (1/3 cup) capacity muffin tin.

Place the egg and milk in a bowl and whisk to combine well. Sift the flour, sugar and baking powder into a bowl, then stir into the milk mixture.

Pour the batter into the tin and bake for 25–30 minutes, or until a skewer inserted in the centres comes out clean. Turn out onto a wire rack to cool.
