Date Drops

250 g (1 cup) butter, softened
110 g (½ cup) caster sugar
1 egg
1 teaspoon ground cinnamon
225 g (1½ cups) plain flour
½ teaspoon bicarbonate of soda
1 tablespoon boiling water
120 g (¾ cup) chopped dates
90 g (¾ cup) chopped walnuts
Preheat oven to 180°C. Line two baking trays with baking paper.
Using an electric beater, beat the butter and sugar until light and creamy. Add the egg and beat well.
Sift the cinnamon and flour into a bowl, then stir into the creamed mixture with the dates and walnuts. Stir the soda into the boiling water in a cup, add to the flour mixture and stir to combine well.
Drop heaped tablespoons of the mixture onto the trays, leaving room for spreading. Bake for 10–15 minutes, or until light golden and cooked through. Transfer to a wire rack to cool.
