Nut Loaf

MAKES ONE 28 CM LOAF

125 g (1 cup) chopped walnuts

250 ml (1 cup) milk

110 g (½ cup) caster sugar

1 egg

300 g (2 cups) self-raising flour

Combine the walnuts and milk in a bowl and soak for 1 hour.

Preheat oven to 180°C. Grease and flour a 28 x 18 x 4 cm loaf tin.

Whisk together the sugar and egg in a bowl. Add the nut mixture and the flour and stir to combine well. Spoon the batter into the tin.

Bake for 40–50 minutes, or until a skewer inserted in the centre comes out clean. Cool loaf in the tin.
