Coconut Buns
MAKES 18
450 g (3 cups) plain flour
1 teaspoon bicarbonate of soda
2 teaspoons cream of tartar
1 tablespoon caster sugar
90 g (1 cup) desiccated coconut
60 ml (¼ cup) milk, or as required
Preheat oven to 180°C. Line a baking tray with baking paper.
Sift the flour, soda and tartar into a bowl. Stir in the sugar, coconut and the milk and stir to form a dough with a heavy dropping consistency, adding a little more milk if required.
Drop tablespoons of the mixture onto the tray, allowing room for spreading.
Bake for 15–20 minutes, or until golden. Transfer to a wire rack to cool.
