Prize Scones

MAKES ABOUT 15

300 g (2 cups) plain flour

2 teaspoons baking powder

250 ml (1 cup) pouring cream

125 ml (½ cup) milk, or as required, plus extra, for brushing

Preheat oven to 200°C. Grease and flour a baking tray.

Sift the flour and baking powder into a bowl. Using a flat-bladed knife, mix in a pinch of salt, the cream and enough milk to make a soft dough, adding a little more milk if required.

Turn the dough out onto a lightly floured surface and roll out to about 4 cm thickness. Using a 6 cm round pastry cutter, cut rounds from the dough. Place the rounds on the tray, leaving room for spreading. Brush the tops with a little milk.

Bake for 12–15 minutes, or until risen and golden. Transfer to a wire rack. Serve warm.
