Date Loaf

MAKES 1 LOAF

450 g (3 cups) plain flour

1 tablespoon butter

3 teaspoons baking powder

165 g (¾ cup) caster sugar

120 g (¾ cup) pitted dates, chopped

1 egg

250 ml (1 cup) milk

Preheat oven to 170°C. Grease and flour a 24 x 13 x 6 cm loaf tin.

Place the flour in a bowl then, using your fingertips, rub in the butter. Stir in the baking powder and sugar. Add the dates, egg and milk and stir to mix well. Spoon the batter into the tin, smoothing the top even.

Bake for 35–40 minutes, or until a skewer inserted in the centre comes out clean. Cool the loaf in the tin, then turn out onto a covered rack to cool completely.
