Brown Sugar Cookies
MAKES ABOUT 30
330 g (1½ cups, firmly packed) brown sugar
375 g (2½ cups) plain flour
1¼ teaspoons bicarbonate of soda
125 g (½ cup) butter, softened
125 ml (½ cup) boiling water
1 tablespoon orange juice
2 teaspoons finely grated orange zest
white sugar, for sprinkling
Preheat oven to 180°C. Line a baking tray with baking paper.
Stir the brown sugar, flour and soda into a bowl. Place the butter in a bowl, add the boiling water and stand until cooled slightly and butter has melted. Add to the sugar mixture with the orange juice and zest, stirring to combine well.
Drop teaspoons of the mixture onto the tray, leaving room for spreading. Sprinkle each lightly with white sugar.
Bake for 15–20 minutes or until cookies are firm. Transfer to a wire rack to cool.
