Date Sponge

SERVES 6

160 g (1 cup) pitted dates

125 ml (½ cup) boiling water

2 tablespoons butter

75 g (1/3 cup) caster sugar

1 egg

185 ml (¾ cup) milk

150 g (1 cup) plain flour

1 teaspoon baking powder

custard, to serve

Preheat oven to 180°C.

Place the dates in the base of a 1.5 litre (6 cup) capacity baking dish and pour over the boiling water. Place in the oven while you make the pudding.

Using an electric beater, beat the butter and sugar in a bowl. Add the egg and beat well. Stir in the milk, flour and baking powder and mix well. Pour the batter over the dates.

Bake for 30–40 minutes, or until the sponge is cooked through.

Serve Date Sponge hot or cold– it’s delicious ot with custard.
