Pan Pacific Fruit Salad

SERVES 10–12
1 pineapple, trimmed, cored and eyes removed
1 small pawpaw, peeled and seeded
1.2 kg watermelon (about 1/3 watermelon), peeled
3 bananas, peeled and sliced
pulp of 12 passionfruit
110 g (½ cup) caster sugar
whipped cream or custard, to serve
Cut the pineapple, pawpaw and watermelon into 1.5 cm pieces. Layer all the fruits in a very large bowl, scattering each layer lightly with the sugar.
Cover the bowl with plastic wrap and refrigerate for 30 minutes, or until chilled.
Serve with cream or custard.
