Peach Salad

SERVES 4
2–3 ripe yellow-fleshed peaches, sliced
1 butter lettuce, leaves washed and dried
1½ tablespoons chopped chives
Widgee Salad Dressing
1 teaspoon mustard powder
½ teaspoon sugar
1 tablespoon white wine vinegar, or to taste
125 ml (½ cup) pouring cream
Scatter the peach slices over the lettuce leaves on a platter and sprinkle the chives over the top. Season well with salt and pepper.
For the dressing, combine the mustard, sugar, vinegar and cream in a bowl. Season well and add a little more vinegar to taste, if required.
Drizzle the dressing over the salad and serve.
