It’s all about the tomatoes in this recipe! If you can get hold of some great tomatoes they really don’t need much: a bit of salt and pepper, canola oil and some tarragon is all you need. The juice from the tomatoes creates its own dressing.
SERVES 6–8
6½ pounds heritage tomatoes, or the best tomatoes you can find
1 red onion, finely sliced
1 bunch of fresh tarragon, leaves picked
Splash of canola oil
Sea salt and freshly ground black pepper
1. Roughly chop the tomatoes into bite-sized chunks and pop into a large bowl with the sliced red onion, picked tarragon leaves and a splash of oil. Season generously with salt and pepper and gently toss the salad.
2. Taste and adjust the seasoning before serving.
