GEORGE: This is an absolutely top-notch drink to cool your mouth down after some spicy wings or a lamb doner smothered in chilli sauce. I always keep a couple of glasses in the freezer at home for serving up frosty beers—you’d be surprised what a difference a chilled glass makes here.
SERVES 4
½ cup fresh lime juice
1 cup good-quality tequila
¼ cup Cointreau
4 x 12-ounce bottles Mexican beer
lime wedges, to serve
1. Shake the lime juice, tequila and Cointreau over ice for about 30 seconds.
2. Strain into chilled, salt-rimmed glasses and top with beer. Serve each glass with a wedge of lime.
