BAKED “CHICKEN-FRIED” CHICKEN

Cooking spray

½ cup all-purpose flour

1 large egg

¼ cup crushed round butter crackers

¼ cup bread crumbs

⅛ teaspoon salt

⅛ teaspoon ground black pepper

4 boneless, skinless chicken breast halves, pounded thin

Preheat the oven to 400 degrees. Coat a rimmed baking sheet with cooking spray. Spread the flour in a shallow bowl. Beat the egg in another shallow bowl. In a large bowl mix the cracker crumbs, bread crumbs, salt, and pepper.

Dip each chicken piece in the flour, then in the egg, then in the bread crumb mixture, and place on the baking sheet. Bake for 8 minutes, then use tongs to flip each piece over. Bake for another 8 minutes, or until the chicken is cooked through.
