SUBWAY: OATMEAL RAISIN COOKIES

Ever since I first saw the Subway campaign starring weight-loss-success-story Jared, I’ve wondered exactly what he ate. I’m pretty sure he didn’t have too many cookies. A number of my friends, however, swear by Subway’s Oatmeal Raisin ones . . . especially now that they have this great alternative with half the fat.

1 cup unbleached flour

½ teaspoon ground cinnamon

½ teaspoon baking soda

½ teaspoon salt

1 stick (½ cup) light butter, softened

½ cup granulated sugar

½ cup packed brown sugar

1 egg white

½ teaspoon vanilla extract

1½ cups quick oats

½ cup raisins

PREHEAT the oven to 375°F. Line a baking sheet with parchment paper.

In a small bowl, combine the flour, cinnamon, baking soda, and salt.

In the large bowl of an electric mixer fitted with beaters, combine the butter, granulated sugar, and brown sugar. Beat for 2 minutes, or until smooth. Add the egg white and vanilla. Mix on medium speed until well blended.

Add the flour mixture. On low speed, beat until no flour is visible. Add the oats and raisins. Stir to incorporate.

Measure 2½ level tablespoons of the dough. Shape into a ball. Place on the reserved baking sheet. Lay a small sheet of waxed paper over the cookie. With your palm, flatten the ball into a 3¾" circle. Repeat rolling and pressing the dough so the cookies are not touching on the sheet. (Work in batches, if necessary.)

For softer cookies, bake for 8 minutes. For crisper Subway-style cookies, bake for 12 minutes. Cool for 5 minutes, then remove to the rack to cool completely.
