STEAK ’N SHAKE: FRISCO MELT

Ihave to hand it to the folks at Steak ’n Shake. Their nutritional data breaks out each individual ingredient—I actually get to know when cutting a component is worth it.

After studying the numbers, if I were to custom-order a Steak ’n Shake Frisco Melt, I’d definitely skip the “grilling oil for bread.” Apparently, the oil used on the exterior of the sandwich accounts for 30 grams of fat. That’s right, 30 grams. That’s practically what I eat in a day, and it’s on the outside of the sandwich.

One of the other things I really appreciate about Steak ’n Shake is that I was able to watch the cook make my sandwich. I watched him slather 30 grams of “grilling oil for bread” onto my bread in one steady motion by grabbing a slice from the bag and running it over something that looked like a drum rotating in warm oil. From there, my bread practically fell right onto the grill. How amazing is that? Fully 270 calories in one fell swoop.

5 ounces 96% lean ground beef

1 tablespoon light butter spread, divided

2 slices sourdough sandwich bread

1 slice (½ ounce) light Swiss cheese

2 slices (½ ounce each) 2% milk yellow American cheese, halved diagonally

1 tablespoon + ½ teaspoon Steak ’n Shake Frisco Sauce

½ leaf romaine lettuce

1 slice tomato (¼" thick)

DIVIDE the beef in half. On a sheet of waxed paper, shape each half into a 4½" squarish patty. Set aside.

Meanwhile, preheat a large nonstick skillet over medium-high heat until drops of water sizzle when splashed on the pan. Spread 1 side of each bread slice with half of the butter spread. Place, buttered-sides down, in the skillet. Place the patties next to the bread. Cook the bread for 2 to 3 minutes, or until toasted. Cook the patties for 1 to 2 minutes per side, or until the beef is no longer pink.

Place 1 slice of bread, toasted-side down, on a plate. Top with the Swiss cheese, 1 burger, the American cheese, and the second burger. On the nontoasted side of the second bread slice, spread the sauce evenly to within ¼" of the edge. Place, sauce-side down, onto the sandwich. On top of the finished sandwich, place the lettuce and then the tomato.
