ARBY’S: BIG MONTANA

SAVE: 230 CALORIES, 22 G FAT, 10 G SAT. FAT

This sandwich gets the “Fast Food Fix” Award for easiest and quickest recipe of the book. There’s no way (unless you literally live right next door to an Arby’s, and even then it’s probably not possible) to buy this delicious sandwich quicker than you can make it if you stock the tiny list of ingredients in your refrigerator. It’s simple; it’s fast; you really don’t even need to know how to cook to make it; yet the fat is reduced by more than 75 percent.

1 restaurant-style sesame seed bun (about 3¾")

7 ounces packaged 97% fat-free shaved delicatessen roast beef

PREHEAT a nonstick skillet over medium heat. Place the bun top and bottom, cut-sides down, in the pan. Cook for 2 to 3 minutes, or until toasted.

Meanwhile, lay a sheet of waxed paper on a microwavable plate. Pile the roast beef on the waxed paper. Place in the microwave oven. Cook on low power for 10 seconds. If the roast beef is not warm in the center, rotate it, then cook in 10-second intervals until the center is heated. Place the bun bottom on a plate. Pile the roast beef onto the bun. Cover with the bun top.

BEFORE YOU START Restaurant-style sesame seed buns, sometimes labeled Texas-style buns, are larger than standard hamburger buns, which are about 3½". Look for bagged sesame seed buns in the same supermarket aisle as the hamburger buns. To make sure you have the larger size, grab a package of the hamburger buns for comparison.
