BLIMPIE: BEEF AND CHEDDAR WRAP

When I picked up my first Blimpie wrap, I was surprised to learn that Blimpie serves its wraps on extra-large tortillas—the 12" size that isn’t easy to find outside of Mexican markets and specialty stores. Personally, being a meat lover and a person who doesn’t want to totally overdo it on carbs, I prefer to have this sandwich on a standard low-fat 10" burrito-size wrap, which is plenty big enough to hold the beef, Cheddar, and trimmings. Since I’ve never seen a low-fat 12" tortilla (most have 10 grams of fat or more!), I’ve made over the sandwich using a low-fat 10" burrito-size tortilla. Although the size and weight of the tortilla are only slightly less than the original, the calories and fat are dramatically reduced. Plus, the weight of the important stuff—all of the scrumptious fillings—is the same as the original.

1 burrito-size (10") low-fat flour tortilla

4 ounces packaged 97% fat-free shaved roast beef

3 slices (about 13 ounce each; 1 ounce total) low-fat Cheddar cheese, diagonally cut

½ cup shredded iceberg lettuce

2 slices tomato (18" thick)

1 slice large red onion (18" thick), separated into rings

1½ tablespoons Blimpie Peppercorn Sauce

PLACE the tortilla on a plate. Place the beef, leaving about 1" bare on both ends, in an even strip (about 3" wide) running across the center. Top the beef evenly with the cheese, lettuce, tomato, onion, and sauce. Fold both bare ends over the filling ingredients. Roll the tortilla tightly, finishing it seam-side down on the plate.
