This is a delicious breakfast bread, rich, spicy and oh-so good!
2 T. butter, softened
1-1/2 c. sugar
1 egg, beaten
2 c. all-purpose flour
2 t. baking powder
1/4 t. salt
1 c. milk
In a large bowl, blend butter and sugar; stir in egg. Add flour, baking powder and salt alternately with milk; mix well. Pour batter into a greased 8"x8" baking pan; sprinkle with Cinnamon Topping. Bake at 375 degrees for 30 to 35 minutes, until a toothpick inserted in the center tests clean. Cut into squares; serve warm. Makes 6 servings.
Cinnamon Topping:
1 c. brown sugar, packed
1/4 c. butter, softened
3/4 t. cinnamon
In a bowl, work together butter and brown sugar with your fingertips until well mixed. Stir in cinnamon.
To accurately measure flour, first use a spoon to fluff up the flour while it’s still in the container. Then, spoon flour into the measuring cup and level with a knife.
