T-Bone Steaks with Herbed Garlic Sauce
YOU CAN USE ANY STEAK FOR THIS ENTRÉE, BUT T-BONES HAVE A FANTASTIC FLAVOR. DO AS THE ITALIANS DO, AND SPREAD A LITTLE HERBED OIL OVER A SIZZLING STEAK. WHATEVER IS LEFT OVER CAN BE USED AS A DIP FOR HOT BREAD.
Herbed Garlic Sauce
1/2 cup chopped fresh basil
1/4 cup chopped fresh mint
5 large cloves garlic, minced
3 tablespoons lemon juice
1 tablespoon white wine vinegar
1 teaspoon dried oregano
11/2 teaspoons kosher salt
1/2 teaspoon pepper
1 cup extra virgin olive oil
2 T-bone steaks, at least 1-inch thick
11/2 teaspoons kosher salt
1/2 teaspoon pepper
1. Do ahead: To make the Herbed Garlic Sauce, place the basil, mint, garlic, lemon juice, vinegar, oregano, salt and pepper in the jar of a food processor or blender. Pulse until the mixture is well ground. Pour in the olive oil and pulse just until blended. Set the sauce aside in a covered container until ready to use.
2. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.
3. Season the steaks with the salt and pepper. Cook the meat for 5 to 6 minutes per side, turning once, or until cooked to your preferred doneness.
4. Serve the steaks on warmed plates with the sauce on the side.
Serves 2
This sauce can be refrigerated and will last about a week if tightly covered. Let it come to room temperature and give it a few shakes before using.
