1/2 teaspoon kosher salt
1/4 teaspoon pepper
3/4 cup shredded American and Jack cheese blend
8 ounces ground beef or chuck
2 to 3 tablespoons all-purpose flour
1 (8-ounce) package fresh pizza dough
1 tablespoon cornmeal
1/4 cup ketchup
1/4 cup yellow mustard
8 pickle slices, julienned
2 slices red onion, separated into rings
1/2 cup shredded mozzarella cheese
1/4 cup spicy ketchup
2 strips bacon, cooked crisp
1 medium tomato, thinly sliced
1/4 cup chopped yellow onion
1 cup shredded iceberg lettuce
1. Using your hands, mix the salt, pepper, and 1/4 cup cheese blend into the ground beef. Form a large patty, then refrigerate for at least 10 minutes, covered.
2. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.
3. Grill the patty, turning once, until cooked through; the finished temperature won’t matter because the burger will be baked into the pizza. Set the patty aside for 10 minutes, then cut into small pieces.
4. Preheat the oven to 450°F.
5. Sprinkle a work surface with the flour and coat the pizza dough. Roll it out to a 10- or 11-inch circle. Lightly dust a sheet pan with the cornmeal and transfer the pizza to the pan.
6. Whisk together the ketchup and mustard and spread it evenly over the pizza, leaving a little room at the edges.
7. Layer the remaining half cup of the shredded cheese over the sauce, then scatter the pieces of grilled burger, pickles, onion rings, and mozzarella on top.
8. Bake the pizza for 12 to 15 minutes, or until the crust is lightly golden on the bottom and the cheese is melted.
9. Take the pizza out of the oven and drizzle with the spicy ketchup. Crumble the bacon and scatter it over the pizza along with the sliced tomato and chopped onion. Return the pizza to the oven for a couple minutes more to let the toppings heat through.
10. Top the finished pizza with the shredded lettuce just before serving. Cut into wedges and serve hot.

Making your own spicy ketchup is easy. Take 1 cup of your regular brand and whisk in 1 tablespoon prepared horseradish and 1/2 teaspoon cayenne pepper.
