Bleu Ribbon Burger
RED ROBIN GOES ALL OUT FOR THIS PREMIUM BURGER. DUPLICATING IT AT HOME WILL TAKE BLUE CHEESE, HEINZ 57 SAUCE, CHIPOTLES, AND FRIED ONIONS. ALL GOOD THINGS THAT MAKE A BURGER GREAT.
Chipotle Mayonnaise
1/4 cup mayonnaise, regular or reduced fat
1 chipotle pepper, minced
51/2 ounces lean ground beef or chuck
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 tablespoon Heinz 57 sauce
1 tablespoon crumbled domestic blue cheese
1 onion hamburger bun, split in half
1/4 cup onion straws
2 thick tomato slices
1/4 cup shredded green leaf lettuce
1. Do ahead: To make the Chipotle Mayonnaise, whisk together the mayonnaise and the chipotle pepper until very well blended, and set aside.
2. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.
3. Form a patty from the ground beef and season with the salt and pepper. Grill the patty for 3 to 4 minutes per side, turning once, or until cooked to your preferred doneness.
4. Coat the top of the patty with the Heinz 57 sauce, then top it with the blue cheese. Set it off to the side of the grill a few moments to melt the cheese.
5. Grill the hamburger bun until lightly toasted, taking care to not let it burn. Spread a tablespoon of the Chipotle Mayonnaise on both toasted sides of the bun.
6. Pile the onion straws on the bottom bun and lay the patty and cheese on top. Arrange the tomato slices over the cheese and pack the shredded lettuce on top. Finish the burger with the top half of the bun. Serve hot.
If planning on making several burgers, save some time by mixing the salt, pepper, and Heinz 57 sauce in the ground beef before forming the patties. Refrigerate the patties at least 30 minutes before grilling.
