SCHLOTZKY’S IS KNOWN FOR THE FRESHNESS AND QUALITY OF THEIR INGREDIENTS. THEY OFFER THIS CHICKEN WRAP WITH A SLIGHTLY DIFFERENT TWIST, USING A SAVORY TONKATSU SAUCE.
Tonkatsu Sauce
1/2 cup ketchup or chili sauce
1/4 cup Worcestershire sauce
1/4 cup sake or dry vermouth
3 large cloves garlic, minced
1-inch piece ginger, peeled and minced
2 tablespoons dark brown sugar
2 tablespoons mirin or sherry
2 (8-ounce) boneless skinless chicken breasts
1 teaspoon kosher salt
1/2 teaspoon pepper
4 (10-inch) flour tortillas
Sandwich Fillers
2 cups shredded mixed greens
1 small carrot, julienned
2 tablespoons chopped cilantro
1/4 cup slivered almonds, toasted
1 small red bell pepper, seeded and diced
1 teaspoon kosher salt
1/4 teaspoon pepper
1. Do ahead: Combine the ingredients for the Tonkatsu Sauce in a small saucepan. Whisk vigorously and bring the pan to a boil. Reduce the heat and simmer for 20 minutes. Let the sauce cool completely, then refrigerate in a tightly covered container until ready to use.
2. Pour 1/2 cup Tonkatsu Sauce into a resealable plastic bag. Add the chicken breasts and massage the sauce all around each one. Seal the bag and refrigerate at least 1 hour. Reserve the remaining sauce.
3. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.
4. Shake the excess marinade from the chicken and season it with the salt and pepper. Grill the breasts 6 to 7 minutes per side, turning once, or until cooked through and no longer pink in the center. Set aside to rest for 10 minutes, then cut into small cubes.
5. To build the wraps, heat the tortillas on the hot grill just until flexible, not crispy.
6. Lay them flat on a work surface and spoon the diced chicken into the center of each one. Drizzle with some of the reserved Tonkatsu Sauce. Layer the mixed greens, carrot, cilantro, almonds, and bell pepper over the chicken and season with salt and pepper. Drizzle with a little more sauce.
7. Fold the 2 opposite flaps in toward the center and fold the bottom flap up. Roll the wrap into a cylinder like a burrito. Serve immediately.

The Tonkatsu Sauce can be made ahead of time and refrigerated, tightly covered, up to 1 month.
