3 cups pineapple juice concentrate
1 cup light soy sauce
1 cup Sauvignon Blanc, or other dry white wine
1/2 cup red wine vinegar
1/2 cup golden brown sugar
3 large cloves garlic, minced
1. Whisk the ingredients together thoroughly and store in an airtight container, refrigerated, until ready to use.
2. To use the marinade as a basting sauce, bring it to a boil, then lower the heat and simmer for about 20 minutes. The liquid will thicken, making it perfect for brushing over chops and ribs.
Makes about 6 cups
