Blue Ridge Smokies Barbecue Sauce
ONE OF THE MANY SAUCES DEVELOPED AT TONY ROMA’S OVER THE YEARS IS THIS SMOKY SAUCE, REMINISCENT OF WHAT’S TRADITIONALLY PREPARED IN SOUTHERN VIRGINIA AND NORTHERN TENNESSEE.
1 cup ketchup
1 cup red wine vinegar
1/4 cup dark molasses
1 teaspoon liquid smoke flavoring
1 teaspoon kosher salt
1/2 teaspoon pepper
1/4 teaspoon granulated garlic
1/2 teaspoon onion powder
1. Whisk together all the ingredients in a small saucepan over medium-high heat and bring to a boil.
2. Lower the heat and simmer for 20 to 30 minutes, or until the sauce has thickened.
3. Use the sauce to brush on grilled pork ribs and beef ribs.
Makes about 2 cups
If you really like a smoky flavor, increase the amount of smoke flavoring in this recipe. It can be very strong, so it’s best to start out using less and build from there.
