Wild boar sauce pici

500 gr. of wild boar
Mix of dry carrot, onion, celery, garlic spices
Salt and pepper
3 bay leaves
1 branch of rosemary
1 garlic clove
500 gr fresh tomato passata
100 ml of red wine
200 gr Parmesan cheese
In a saucepan, sautée the oil with salt pepper, spices, garlic, rosemary, tomato sauce, bay leaves.
Pour the diced wild boar meat previously soaked for 1 hour in the red wine and add the  wine as well.
Cook for 30 minutes until partly reduced.
When pasta is boiled in hot and salty water, strain pici and pour them in the sauce and cook for an extra couple of minutes and serve with Parmesan.
