Tantalizing Taco Salad Roll
Serves 4
Ingredients
1 pound lean ground beef
1 (16-ounce) can kidney beans, rinsed and drained
1 teaspoon chili powder (optional)
1 teaspoon garlic powder
8 whole wheat flour or corn tortillas
1⁄2 head romaine lettuce, chopped finely
2 medium ripe tomatoes, chopped finely
1 cup black olives, chopped
1 (10-ounce) jar mild taco sauce (optional)
In a medium skillet, cook ground beef until cooked through. Drain fat from meat.
In a medium mixing bowl, combine beef, beans, chili powder, and garlic powder.
Wipe the skillet with a paper towel and then warm each tortilla in the skillet for 1 to 2 minutes.
On a plate, divide the meat and bean mixture equally over the tortillas.
Divide the salad greens, vegetables, and olives over each tortilla.
Top each with 2 tablespoons of taco sauce, if desired. Fold tortilla over and wrap.
