Grilled Chicken and Mango Salad

A wonderful summer salad, with sweet, bright-colored mango — encourage their eating of this extremely healthy fruit.

Serves 8

Ingredients

3 large ripe mangos

112 tablespoons salt

12 cup chopped cilantro

14 cup chopped scallions

1 teaspoon sesame oil

1 tablespoon olive oil

2 teaspoons apple cider vinegar

4 medium limes

2 bags pre-shredded coleslaw (with carrots)

4 large chicken breasts, cooked, cut in strips

  1. Cut mangos into small chunks.

  2. In a blender, mix salt, 14 cup of the cilantro, chopped scallions, sesame oil, olive oil, chunks from 1 mango, and vinegar until smooth. Set dressing aside.

  3. Juice all of the limes and place in a mixing bowl with coleslaw, the remaining 14 cup cilantro, and prepared mango dressing.

  4. Mix coleslaw with chicken breasts, add additional mango chunks and toss until well blended.

  5. Chill 15 minutes and serve.

Early Introduction Makes for Great Salad Eaters!

Toddlers enjoy color and texture. After age one, it is acceptable to present all of the different vegetables (avoid spinach, beans, beets, nuts, soy, and other “high-oxalate” foods before the age of one) — from puréed to the fresh. These are perfect finger foods; for instance, chopped pieces of tomato, soft-cooked broccoli and cauliflower, and well-cooked carrots, chopped to prevent choking.
