Grilled Chicken and Mango Salad

Ingredients
3 large ripe mangos
11⁄2 tablespoons salt
1⁄2 cup chopped cilantro
1⁄4 cup chopped scallions
1 teaspoon sesame oil
1 tablespoon olive oil
2 teaspoons apple cider vinegar
4 medium limes
2 bags pre-shredded coleslaw (with carrots)
4 large chicken breasts, cooked, cut in strips
Cut mangos into small chunks.
In a blender, mix salt, 1⁄4 cup of the cilantro, chopped scallions, sesame oil, olive oil, chunks from 1 mango, and vinegar until smooth. Set dressing aside.
Juice all of the limes and place in a mixing bowl with coleslaw, the remaining 1⁄4 cup cilantro, and prepared mango dressing.
Mix coleslaw with chicken breasts, add additional mango chunks and toss until well blended.
Chill 15 minutes and serve.
