Black Bean Baked Nachos

An all-in-one great sport snack! Prepare the bean “dip” ahead of time to avoid being late to practice.

Serves 4

Ingredients

1 (15-ounce) can black beans, rinsed and drained

1 (1412-ounce) can salsa-style chunky tomatoes

1 (7-ounce) can whole-kernel corn, drained

1 teaspoon hot chili powder (optional)

4 servings of baked tortilla chips

1 (16-ounce) package part-skim mozzarella cheese

  1. Preheat oven to 350°F.

  2. Blend beans and tomatoes in a food processor or blender until finely chopped.

  3. Mix in corn and chili powder.Spread baked tortilla chips on a cookie sheet.

  4. Sprinkle mozzarella cheese evenly over chips.

  5. Bake for 5 to 10 minutes, or until cheese is melted. Remove chips from oven, and enjoy with the bean dip.

Serve the Team a Great Snack

This is a unique way to offer high protein (beans and cheese) plus that high carb for that afternoon practice. It should hold them well as they compete for first place!
