Black Bean Baked Nachos
Serves 4
Ingredients
1 (15-ounce) can black beans, rinsed and drained
1 (141⁄2-ounce) can salsa-style chunky tomatoes
1 (7-ounce) can whole-kernel corn, drained
1 teaspoon hot chili powder (optional)
4 servings of baked tortilla chips
1 (16-ounce) package part-skim mozzarella cheese
Preheat oven to 350°F.
Blend beans and tomatoes in a food processor or blender until finely chopped.
Mix in corn and chili powder.Spread baked tortilla chips on a cookie sheet.
Sprinkle mozzarella cheese evenly over chips.
Bake for 5 to 10 minutes, or until cheese is melted. Remove chips from oven, and enjoy with the bean dip.
