BBQ Roast with Potatoes

Home cooking come true — serve with a Caesar salad (with light dressing) for a perfect meal.

Serves 8-10

Ingredients

3 to 4 pounds lean roast (chuck or bottom round)

12 to 18 ounces barbecue sauce

12 cup ketchup

2 tablespoons onion soup mix

Pepper to taste

Garlic powder to taste

4 medium potatoes, cubed

  1. Preheat oven to 375°F. Line roasting pan with aluminum foil.

  2. Mix together the barbecue sauce, ketchup, onion soup mix, pepper, and garlic powder, and rub mixture on the roast.

  3. Place in a large pot and cook on top of stove for 30 to 40 minutes, turning constantly.

  4. Place in the prepared roasting pan and bake 1 to 112 hours.

  5. Place potatoes in pan. Bake together in oven for 1 hour or until desired doneness.
