Chicken Finger Dunkers

Serve the fingers with a green leafy salad and a baked potato for a tasty, kid-friendly meal. Offer their favorite low-fat salad dressing, and a trans-fat-free margarine for their baked potato.

Serves 4-6

Ingredients

1 cup all-purpose flour or Wondra gravy mix

12 teaspoon salt

14 teaspoon pepper

34 cup low-fat milk (or 3 egg whites)

4 chicken breasts, skinless, boneless, cut in strips

14 cup olive oil

13 cup honey

14 cup Dijon mustard

  1. Mix flour, salt, and pepper in a shallow bowl.

  2. Place milk (or egg whites) in a shallow bowl and dip chicken into it.

  3. Dip into flour mixture. Coat well. Place chicken on waxed paper.

  4. Heat oil in skillet and pan-fry chicken strips until golden brown.

  5. Mix together the honey and Dijon mustard to prepare sauce; in fact, try to prepare this sauce the night before for a richer flavor. Dip chicken in sauce and enjoy.

We equate kids with “chicken fingers.” They are usually breaded with trans fat (the dangerous kind), artery-clogging, and deep-fried — truly, a very poor choice as our children’s staple food, especially in a restaurant or fast-food establishment. Your kids are chicken nugget freaks? Make your own. They can be just as delicious, pan-fried or baked.
