Sweet and Sour Shrimp
Serves 4
Ingredients
2 tablespoons cornstarch
1 cup pineapple juice, unsweetened
1⁄2 cup chicken broth
1⁄3 cup red wine vinegar
1⁄4 cup dry sherry
1 medium red pepper, diced
20 raw fresh shrimp, shelled and deveined
2 cups brown rice, cooked
In a saucepan, combine cornstarch, pineapple juice, and broth.
Bring to a boil over medium heat, stirring occasionally, until thickened. Turn down the heat, and simmer for 1 to 2 minutes.
Stir in vinegar and sherry.
Add red pepper and shrimp, and cook for 4 to 6 minutes, until tender.
Spoon over brown rice.
