Sweet and Sour Shrimp

Shrimp is always a great way to get children to eat some sort of seafood.

Serves 4

Ingredients

2 tablespoons cornstarch

1 cup pineapple juice, unsweetened

12 cup chicken broth

13 cup red wine vinegar

14 cup dry sherry

1 medium red pepper, diced

20 raw fresh shrimp, shelled and deveined

2 cups brown rice, cooked

  1. In a saucepan, combine cornstarch, pineapple juice, and broth.

  2. Bring to a boil over medium heat, stirring occasionally, until thickened. Turn down the heat, and simmer for 1 to 2 minutes.

  3. Stir in vinegar and sherry.

  4. Add red pepper and shrimp, and cook for 4 to 6 minutes, until tender.

  5. Spoon over brown rice.

Shrimp — a Wonderful Seafood Source

In the past it was believed that shrimp were high in cholesterol and should be limited or avoided. However, recent research shows that the high percentage of “good fats” in shrimp reduces the impact of the cholesterol. Shrimp tend to be a seafood that kids will eat. Avoid the fried version!
