Snow Pea Salad

What a colorful and crunchy salad! Full of great vegetables, fruits, and nuts. Look for the rice noodles in the ethnic section of the grocery store.

Serves 8-10

Ingredients

1 cup slivered almonds

1 bag (16–20 ounces) shredded cabbage

1 medium bag fresh snow peas, blanched

1 (10-ounce) can mandarin oranges in own juice, drained

1 package rice noodles

Salad dressing:

13 cup canola oil

1 tablespoon reduced-sodium soy sauce

1 tablespoon sesame oil

12 cup sugar

14 cup wine vinegar

  1. Toast almonds in oven (or toaster oven), for about 5 to 10 minutes.

  2. Toss all salad ingredients, except for almonds and rice noodles.

  3. Prepare salad dressing by combining all ingredients in a small bowl and mixing well.

  4. Add salad dressing to salad, and sprinkle almonds and rice noodles on top.

The Salads Will “Grow” on Them

Studies reveal that many children are just not good salad eaters. Is this because you, as a parent, do not enjoy or prepare them? Do you just take it for granted that they will not eat something so healthy? Encourage and influence your children early to become salad eaters. Though dressings tend to hold much of the calories and fat in salads, you can offer low-fat dressings. Throw in the fruits and vegetables you know they’ll eat!
