Sautéed Fish and Vegetables

Tilapia is a very mild fish. Mixed with the vegetables, it is very pleasing to the eye and to the palate.

Serves 4-6

Ingredients

6 Tilapia fillets

2 medium lemons (juice only)

2 teaspoons garlic powder

1 teaspoon pepper

2 teaspoons oregano

3 tablespoons olive oil

1 small onion, sliced

12 cup flour

1 (14-ounce) bag frozen mixed vegetables

14 cup light soy sauce (preferably citrus soy sauce)

4 tablespoons sesame oil

1 tablespoon rice vinegar

Sesame seeds to garnish

  1. Cut fish in medium size pieces.

  2. Prepare marinade with lemon juice, garlic powder, pepper, and oregano. Place fish in marinade and refrigerate for 1 hour.

  3. In a small skillet, heat olive oil on low heat, and sauté onions until golden, about 4 to 5 minutes.

  4. Dip fish pieces in flour and sauté on both sides until golden, about 4 minutes on each side.

  5. Remove the fish from the pan and set aside.

  6. Add vegetables, soy sauce, sesame oil and vinegar to the frying pan. Sauté the vegetables for a few minutes, and then place fish carefully on top. Place lid on pan and cook for 10 minutes.

  7. Add a little more sauce if needed, sprinkle with sesame seeds, and serve.
