Sautéed Fish and Vegetables
Serves 4-6
Ingredients
6 Tilapia fillets
2 medium lemons (juice only)
2 teaspoons garlic powder
1 teaspoon pepper
2 teaspoons oregano
3 tablespoons olive oil
1 small onion, sliced
1⁄2 cup flour
1 (14-ounce) bag frozen mixed vegetables
1⁄4 cup light soy sauce (preferably citrus soy sauce)
4 tablespoons sesame oil
1 tablespoon rice vinegar
Sesame seeds to garnish
Cut fish in medium size pieces.
Prepare marinade with lemon juice, garlic powder, pepper, and oregano. Place fish in marinade and refrigerate for 1 hour.
In a small skillet, heat olive oil on low heat, and sauté onions until golden, about 4 to 5 minutes.
Dip fish pieces in flour and sauté on both sides until golden, about 4 minutes on each side.
Remove the fish from the pan and set aside.
Add vegetables, soy sauce, sesame oil and vinegar to the frying pan. Sauté the vegetables for a few minutes, and then place fish carefully on top. Place lid on pan and cook for 10 minutes.
Add a little more sauce if needed, sprinkle with sesame seeds, and serve.
