Spinach Lasagna

Sneak in the vegetables and 2 or 3 servings of high-calcium cheese right in one meal. Add a tossed salad, and the meal is really all-inclusive.

Serves 8-10

Ingredients

2 (10-ounce) packages frozen chopped spinach

32 ounces low-fat cottage cheese

2 eggs

Garlic powder and pepper to taste

Nonstick cooking spray

8 ounces oven-ready lasagna noodles

2 cups reduced-fat Monterey jack cheese

1 cup grated Parmesan cheese

  1. Preheat oven to 350°F.

  2. Cook spinach according to the package directions. Drain.

  3. In a medium mixing bowl, blend cottage cheese, eggs, garlic powder and pepper.

  4. Spray 13" × 9" Pyrex with cooking spray.

  5. Place a layer of noodles on the bottom of the pan. Layer the cottage cheese mixture. Top with Monterey jack cheese, cooked spinach, and Parmesan cheese.

  6. Repeat layers, ending with the cheese on top.

  7. Bake for 30 to 45 minutes.
