Chocolate Chip Banana Bread

One for the record books — one of the most delicious desserts in the whole world. Either bake as a banana bread, or use a muffin tin, and fill muffin cups 23 of the way full.

Serves 8-10

Ingredients

1 teaspoon baking soda

34 cup low-fat sour cream

12 cup trans-fat-free margarine

112 cups sugar

2 eggs

1 teaspoon vanilla extract

2 large ripe bananas, cut into chunks

1 teaspoon baking powder

2 cups flour

8 to 10 ounces mini chocolate morsels

  1. Preheat oven to 350°F.

  2. Mix baking soda and sour cream and allow to stand for several minutes.

  3. In a food processor, combine margarine, sugar, eggs, and vanilla. Mix for 2 minutes.

  4. After 2 minutes, add chunks of banana.

  5. Add the baking soda-sour cream mixture, and mix for 10 seconds.

  6. Add flour and baking powder slowly.

  7. Mix in chocolate chips.

  8. Place batter in a loaf pan and bake for 1 hour (or muffins for 20 to 30 minutes).
