Chocolate Chip Banana Bread
Serves 8-10
Ingredients
1 teaspoon baking soda
3⁄4 cup low-fat sour cream
1⁄2 cup trans-fat-free margarine
11⁄2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 large ripe bananas, cut into chunks
1 teaspoon baking powder
2 cups flour
8 to 10 ounces mini chocolate morsels
Preheat oven to 350°F.
Mix baking soda and sour cream and allow to stand for several minutes.
In a food processor, combine margarine, sugar, eggs, and vanilla. Mix for 2 minutes.
After 2 minutes, add chunks of banana.
Add the baking soda-sour cream mixture, and mix for 10 seconds.
Add flour and baking powder slowly.
Mix in chocolate chips.
Place batter in a loaf pan and bake for 1 hour (or muffins for 20 to 30 minutes).
