CLAFOUTI IS A TRADITIONAL COUNTRY-STYLE FRENCH DESSERT COMPOSED OF A LAYER OF FRESH FRUIT—BLACKBERRIES, IN THIS CASE—TOPPED WITH BATTER. SOME STYLES ARE MORE CAKELIKE WHILE OTHERS ARE MORE LIKE A PUDDING.

BAKE 10 minutes at 375°F + 25 minutes at 350°F
1. Preheat oven to 375°F. Using the softened butter, butter a large heavy oven-going skillet, six mini skillets, or six 6- to 8-oz. ramekins. In a bowl beat eggs and granulated sugar with a mixer 3 minutes or until light and lemon color. Stir in the next seven ingredients (through salt).
2. Arrange berries in the prepared skillet. Carefully pour batter over berries. Bake 10 minutes. Reduce oven temperature to 350°F. Bake 25 to 30 minutes more for large skillet or 20 to 25 minutes more for smaller pans or until filling is set and top is golden brown.
3. Sprinkle with powdered sugar and serve warm with crème fraîche. MAKES 6 SERVINGS.
*Tip If using frozen berries, arrange frozen berries on a baking sheet lined with paper towels. Thaw 10 to 15 minutes (berries will not be fully thawed). Carefully transfer to skillet (try not to break berries).
