8 ounces cooked ham or turkey bacon, crumbled
1 cup diced red bell pepper
1 cup diced onion
¼ teaspoon salt
⅛ teaspoon ground black pepper
2 tablespoons water
Preheat the oven to 350ºF. Lightly grease eight muffin cups with butter. In a large bowl, beat the eggs, then add the ham or turkey bacon, bell pepper, onion, salt, pepper, and water, mixing thoroughly. Pour the mixture evenly into the muffin cups. Bake until the omelet muffins are set in the middle, approximately 17 to 20 minutes.
