6 tablespoons chia seeds
2 cups unsweetened coconut, almond, or cashew milk
½ teaspoon vanilla extract
½ to 1 scoop protein powder (optional)

In a bowl or Mason jar, mix together the chia seeds, milk, vanilla, and protein powder (if using) until the ingredients are well combined. Let the mixture sit for 5 minutes, then stir it again to break up any clumps of chia seeds. Cover the mixture (or put the lid on the jar) and refrigerate it for 1 to 2 hours or overnight. It will be ready to eat when it’s thick, not liquidy; if it’s still runny after the designated refrigeration time, add more chia seeds, stir the mixture, and refrigerate it for another 30 minutes. To serve it, divide the mixture between two bowls and top them with berries.
