1½ cups cooked quinoa
2 tablespoons chia seeds
½ cup raw almonds, chopped
2 cups Greek yogurt (plain or vanilla)
1 cup sliced strawberries
1 cup blueberries
Mix the quinoa, chia seeds, and almonds. Place ¼ cup yogurt in the base of each of four glasses or jars, then evenly distribute the quinoa mixture between the parfait vessels. Top each quinoa mixture with ¼ cup strawberries, followed by another ¼ cup yogurt, followed by ¼ cup blueberries. Cover the parfaits and refrigerate them overnight or until ready to serve.
