Waffle Pizza

Brace yourselves, because there is such a thing as waffle pizza, and yes, it is incredibly delicious. The traditional waffle gets a savory twist with a touch of basil and garlic powder in the batter, and the cooked waffles are topped with a small dollop of tomato sauce, some cheese, and chicken sausage, then baked until the edges are crispy and the cheese is gooey. The key here is to use only a little tomato sauce on the waffle—too much and it will get soggy no matter how long you bake it. You just want a hint of that tomato flavor while allowing the waffle to stay nice and firm, perfect for slicing! • makes 5 waffle pizzas

Savory Waffle Batter

Toppings

For the waffles, in a medium bowl, mix the flour, brown sugar, baking powder, basil, salt, and garlic powder. Add the milk, olive oil, and eggs and whisk until just combined; it is okay if there are still a few lumps in the batter. Allow the batter to rest for 15 minutes.

Preheat the oven to 425°F.

Heat the waffle iron and cook 5 waffles according to manufacturer’s directions.

For the toppings, spread 2 tablespoons of the pizza sauce on each waffle, then top each with 3 tablespoons Parmesan, 3 slices mozzarella, and 3 slices sausage.

Place the waffle pizzas on baking sheets and bake for about 10 minutes, until the cheese is melted and the tomato sauce darkens around the edges. Garnish with fresh basil and serve.
