FRIED BROWN RICE

Yields 4 servings

I make a huge batch of brown rice nearly every week. On the third or fourth day, when my rice is getting a little tough, it’s time to bust out this fried rice recipe. It’s easily one of my favorite meals.

Ingredients:

1 tablespoon sesame oil

½ cup diced red, white, or yellow onion (about ½ medium onion)

1 teaspoon minced garlic (about 2 small cloves)

½ cup frozen peas

½ cup grated or finely diced carrots

2½ cups cooked brown rice (see page 226)

1½–2 tablespoons soy sauce

Optional Toppings:

1 tablespoon hot sauce

1 cup Fried Tofu (see page 246)

½ cup chopped unsalted roasted peanuts

Directions:

1.    In a large pan over medium-high heat, heat the sesame oil. Add the onion, garlic, peas, and carrots and sauté for 3 minutes or until the onion is tender and translucent.

2.    Add the cooked brown rice and soy sauce. Cook for 5 to 8 minutes, stirring frequently.

TONI’S TIPS:

>>I like my fried rice to be fried and crispy, so rather than stir, I let mine sit for a couple of minutes at a time, then flip over the rice using a spatula.
