Yields 1 to 2 servings
Trust me, you won’t miss dairy when you see how plain ol’ frozen bananas whip up nicely into soft serve ice cream.
Ingredients:
2 ripe bananas, peeled, sliced, and frozen
Optional Additions:
Cocoa powder added in step 1
Peanut butter (creamy or chunky) added in step 1
Fresh or frozen fruit added in step 1
Optional Toppings:
Drizzle of nondairy chocolate sauce
1 handful chopped unsalted roasted peanuts
Dollop of Coconut Whipped Cream (see page 213)
Instructions:
1. In a food processor or high-powered blender, pulse or blend the frozen sliced bananas until you have a thick, creamy ice cream.
2. Scoop into a bowl or ice cream cone, top with your favorite toppings, and enjoy immediately.
TONI’S TIPS:
>>If you only have a regular blender, you can still make this—you’ll just need to add a few splashes of plant-based milk to get things going. Add 1 tablespoon at a time so you can keep it from getting too runny. The more milk you add, the thinner the ice cream will be.
