BAKED APPLES

Yields 3 to 4 servings

The first time I had baked apples, I used a recipe from my all-time favorite vegan cookbook, Colleen Patrick-Goudreau’s The Joy of Vegan Baking. I had eaten apple pie and apple cobbler, which I loved because of the delicious piecrust and crumbles, but it never occurred to me that the star of a dessert could be the apples themselves.

When I was developing recipes for the dessert e-book on PlantBasedMealPlan.com, I brainstormed how to super simplify a baked apples dessert with just a few ingredients. This version is paired down to just three ingredients, with its sweetness coming from the apple juice.

Ingredients:

3 green apples, cored and evenly sliced

¼ cup apple juice

1½ teaspoons cinnamon

Optional Additions:

¼ cup brown sugar added in step 3

Optional Toppings:

1 tablespoon chopped pecans

Directions:

1.    Preheat the oven to 365 degrees.

2.    In a 9 × 9-inch baking pan, spread the apple slices in a single layer.

3.    Pour the apple juice over the apples and sprinkle the cinnamon on top.

4.    Cover the pan with aluminum foil and bake for 15 to 18 minutes or until the apples are a lighter color and have a soft texture.
