ORANGE CREAMSICLES

Yields 6 popsicles

Most of my twenties were spent living in older homes that only had window air-conditioning units. That doesn’t quite cut it when you’ve got 112-degree heat waves! That’s when these popsicles become your best friend.

And as usual, you should feel free to improvise and add whatever frozen fruit you’d like. Try some blueberries or a handful of pineapple chunks. Yum!

On a side note, how cute is my little brother?

Ingredients:

2 frozen bananas

¾ cup plant-based milk

1¼ cups orange juice

1½ teaspoons vanilla extract

Directions:

1.    In a blender, blend all the ingredients on high until thoroughly combined.

2.    Pour the mixture into popsicle molds, place in the freezer, and freeze overnight or until entirely solid, about 8 hours.

TONI’S TIPS:

>>If you don’t have popsicle molds, you can fill your ice cube trays, cover with aluminum foil, and pop toothpicks in each cube.

If you’re having trouble getting the popsicle out of the mold, run the mold under warm water.
